These almost magical tomatoes are grown along Italy's Amalfi Coast around Sorrento in the volcanic soil at the base of Mount Vesuvius. The San Marzano's low acidity and low sugar content achieve a subtle flavor balance that makes chefs the world over prize them. For a basic, unadorned marinara sauce, mash these peeled tomatoes, add a couple teaspoons of basil and chopped garlic, three tablespoons of olive oil and salt and pepper, then cook for 10-15 minutes. Pizza sauce is even simpler - just the tomatoes, salt, pepper and a little oregano.
