Nonna Luisa Organic San Marzano Tomatoes

These almost magical tomatoes are grown along Italy's Amalfi Coast around Sorrento in the volcanic soil at the base of Mount Vesuvius. The San Marzano's low acidity and low sugar content achieve a subtle flavor balance that makes chefs the world over prize them. For a basic, unadorned marinara sauce, mash these peeled tomatoes, add a couple teaspoons of basil and chopped garlic, three tablespoons of olive oil and salt and pepper, then cook for 10-15 minutes. Pizza sauce is even simpler - just the tomatoes, salt, pepper and a little oregano.

Gnocchi

Your Italian Nonna hand rolled her gnocchi, then dropped it in a gallon of boiling water, threw in a bit of salt and stirred it for a couple of minutes, then drained it and served it like pasta. She might have done it with a marinara sauce, but not always. Nonna liked variety and thought each dinner should be a new surprise. One night, her gnocchi would have a cream pesto with sherry and whole pine nuts. The next night, simply lemon, butter and garlic. Mangia bene!
