Yield: Makes 2 3/4 cups, 6 serving
1. In 1-quart saucepan over high heat, heat water to boiling. In medium bowl, stir in boiling water into gelatin until gelatin is dissolved. Stir in V-8 Juice and onion. 2. Refrigerate until mixture mounds slightly when dropped from a spoon. Fold in cabbage, carrot and pineapple. 3. Lightly spray individual 4-ounce molds with vegetable cooking spray. Pour gelatin mixture into individual molds. Cover and refrigerate until set, about 2 hours. 4. To serve, unmold onto lettuce-lined plate.
