Wash and peel Paw Paw fruit. Mash in a bowl with lime peel. Gradually stir in 1 pint of water. Mix well and strain fruit. Add remaining water to fruit, mix and strain again to be sure all of the flavor is extracted. Add salt and sugar to fruit. Chill before serving.
Note: Paw Paw extract is suitable as a flavoring to be added to ice cream or other recipes.
