Wrap cheese cubes with strips of prosciutto. Then wrap shrimp around cheese cubes, securing with wooden picks. Cover and chill 10 minutes.
Whisk together olive oil, vinegar, rosemary, garlic and red pepper in a large bowl; add shrimp, and toss. Cover and chill 10 minutes.
Remove shrimp from marinade, discarding marinade. Serve on lettuce-lined plate if desired.
