Meyer lemons are very juicy, slightly sweeter and less acidic than regular lemons.
Yield: 6 servings
In a gallon size ziplock bag add the marinade ingredients: mustard, lemon juice, lemon zest, rosemary, thyme, chili flakes, olive oil, salt and pepper. Reserve 1/2 cup marinade and set aside for basting.
Add chicken to the ziplock bag, seal and marinate for 4 to 6 hours.
Grill to perfection:
Oil the grill rack and preheat grill on medium high heat. Remove chicken from the marinade and place on grill rack. Discard marinade in bag.
Grill chicken thoroughly until grill marks appear (5 to 15 minutes on each side, depending on level of heat). Baste chicken with the 1/2 cup additional marinade. At the same time grill thick lemon slices. Remove from heat and let chicken rest for 5 minutes.
Garnish with grilled lemon slices and serve.
