My daughter is a vegetarian so when I saw Smart Ground Mexican Style in the refrigerated section by the tofu, I decided to give it a try. Even though we had some chicken that night, everyone loved the Smart Ground and the chicken was left over!
Yield: Serves 4 people with hearty appetites
In a pan (the same as you would use for ground meat) fry the Smart Ground. See directions on back of package.
Steam a package of tortillas in the microwave or quickly heat over the stove. Serve the tortillas on a plate, covered to keep them warm.
Serve the meal buffet style so everyone can build their own tacos. Place lettuce, onion, cheese, beans, cooked Smart Ground and salsa in individual serving bowls with serving spoons.
Add a big bowl of fresh tortilla chips and let the fun begin!
*If the Smart Ground is plain, add cumin, salt, pepper and onions to the frying pan mixture for extra flavor. Smart Ground has no fat, low carbohydrates, and 9 grams of protein per serving.
