Hearts of Palm and Tomato Salad is an elegant alternative for your next BBQ... and super easy to prepare.
Yield: 4 to 6 servings
| Salad: | |||
| 1 | container | (16 ounce) hearts of palm | |
|
|
|||
| 1 | container | (16 ounce) marinated artichoke hearts | |
|
|
|||
| 1 | pound | fresh cherry tomatoes | |
|
|
|||
| 1/2 | cup | fresh parsley, chopped | |
|
|
|||
| 1 | container | (8 ounce) pitted kalamata olives or sliced black olives | |
|
|
|||
| Dressing: | |||
| 1/2 | cup | olive oil | |
|
|
|||
| 1/2 | cup | red wine vinegar | |
|
|
|||
| 1 | teaspoon | granulated sugar | |
|
|
|||
Drain all salad items and combine salad ingredients.
Whisk dressing together and toss with vegetables.
