Preparation Time: 20 min; Freeze Time: 2 hrs
Spread 1/4 cup ice cream onto flat side of each of 12 cookies. Cover with remaining cookies to make 12 sandwiches.
Roll edges in any of the decor choices listed. Transfer sandwiches to baking sheets and freeze 1 to 2 hours or until firm.
Wrap individually in plastic wrap and freeze for up to 2 weeks.
