Kale, Pine Nut and Golden Raisin Salad

Mollie Stone's Markets' Original Recipes

This salad is high in fiber and a good source of protein... but the best news is that this is a very old "Nonna" recipe that keeps people happy and healthy!

Yield: 4 to 6 servings



Remove ribs and stems from kale. Coarsely chop the kale.

Cut the zucchini and crook neck squash into small cubes or shred on a mandolin.

Combine kale, zucchini, squash, raisins and pine nuts. Add salt and pepper and set aside.

For the dressing:
Blend olive oil and lemon juice and toss with the vegetable mixture. Chill before serving.
